180 grams of flour
500 mL whole milk
2 large eggs
1 pinch of salt
Pinch of pepper

Instructions of the Caneles

  2. Let the batter rest: Cover the bowl with plastic wrap and let the batter rest at room temperature for 1 hour. This allows the flour to absorb the liquids and creates a chewier texture.
  3. Preheat the oven: Your ideal oven temperature before putting in the cannele batter is 160°C (th. 5/6).
  4. Fill the moulds: Grease the canelé moulds with butter or nonstick cooking spray. Fill ¾ of the moulds with the batter.
  5. Bake the cannelés: Bake the cannelés for 45 minutes, or until they are golden brown and puffed. Don’t open the oven door during baking, as this can cause the cannelés to collapse.
  6. Cool the cannelés: Let the cannelés cool in the moulds for a few minutes before transferring them to a wire rack to cool completely.
